How to choose a non stick pan and which coating is good for non stick pans?

The manufacturing process of pots can be mainly divided into three types.

The first type is a stretching pot, which has a simple manufacturing process and low cost. Used for making non stick cookware, it is usually made by stretching aluminum sheets with a stretching machine. The most common one in the domestic market is the stretching pot, which has a low price and low production threshold. Even family workshops can produce it. The pot body is relatively thin, and over time, the bottom of the pot may even deform and protrude.

The second type is the imitation die-casting pot, which has a similar process to the stretching pot and also uses aluminum sheets. However, the aluminum sheets of the imitation die-casting pot are thicker and pressed by a forging press, which increases the cost and threshold. Generally, small and medium-sized factories can manufacture it. The thickness of the pot body is significantly increased compared to the stretching pot, similar to the thickness of the die-casting pot. It is more common in the domestic mid-range market and the Americas.

The third type is the die-casting pot, which has a relatively complex process that requires melting aluminum ingots into aluminum water and then injecting it into the die-casting machine. It is formed through a mold and has no rivets on the pot body. Generally, both stretching pots and imitation die-casting pots have rivets on the pot body, which is also an intuitive way of judgment. Commonly found in non stick cookware in Europe, the process cost is relatively high, the pot body is thick, the heating is uniform, and it will not deform. Generally, only large factories have the strength to manufacture, and they are mostly used for export.

Of course, the production process is only one aspect and cannot directly indicate the quality of the cookware. Non stick cookware also depends on the technical level of the coating and spray coating.

2. Non stick pan coating.

Currently, non stick pan coatings on the market are mainly divided into fluorine-containing coatings and ceramic coatings.

At least 80% of non stick pan coatings on the market are fluorine-containing coatings, polytetrafluoroethylene (PTFE), or silicone resins, including the current non stick pan made of vermiculite, most of which are also such coatings rather than stone. Of course, you don't need to worry about it being toxic, as long as it's a legitimate brand of fluorinated coating, it's harmless. For example, DuPont, Huafu, and ilag are all good coating brands. As far as I know, brands like Woll and WMF use coatings. The use of fluorine-containing coatings should not exceed 260 degrees, as it will damage their stability. For normal cooking, there is no need to worry. If the food reaches 200 degrees, it will already be burnt into coke~~

Another type is ceramic coating, which uses nano ceramic technology to achieve non stick effect through molecular tightness, without PTFE PFOA, high temperature resistance, corrosion resistance, wear resistance, and high hardness. The disadvantage is poor non stick effect and poor durability.
